I am so excited to share my all time favorite recipe - Zesty Pork Meatballs!
This recipe is a spin-off of another recipe I found this winter and it has so many amazing, zesty flavors. I like to pair the meatballs with rice and green beans. Hope you try it out and enjoy them as much as I do!
Ingredients
1 lb Fairland Farms ground pork
Heaping 1/3 cup of Panko Breadcrumbs
3 scallions
1 thumb of ginger
4 TBSP soy sauce
3 TBSP mayo
3 TBSP sour cream
3 TBSP Honey (don't skimp)
Instructions:
Preheat oven to 425 and lightly oil baking sheet
Thinly slice scallions - separate greens from whites
Mince white scallions
Peel and finely chop ginger
In a large bowl, combine Fairland Farms pork, panko, scallion whites, ginger, 1 TBSP soy sauce, salt, and pepper.
Form into golf ball sized meatballs. Place on one side of the baking sheet
Bake for about 15 minutes or until cooked. The meat should be 145 degrees.
While you wait for the meatballs to cook, add mayo, sour cream, honey, and remaining soy sauce to a bowl and whisk to combine.
Once meatballs are cooked, cover them in the sauce
Garnish your meal with your green scallions
