Pork Enchiladas

Spice up your menu with this simple and delicious pork enchilada recipe! The secret ingredient in these - cream cheese - makes them extra tasty. Here’s what you’ll need:

  • Fairland Farms ground pork - 1 pound
  • Taco seasoning
  • Enchilada sauce - 2 10 oz cans
  • Black beans
  • Black olives
  • Flour tortillas - taco sized
  • Shredded cheese - 2 cups 
  • Cream cheese - 1 pkg, cut longways into small strips


  1. Turn your oven on to 375°F
  2. Spray a 9x13 baking dish with non stick spray 
  3. Pour and spread half a can of enchilada sauce into your dish
  4. In a skillet, cook your ground pork and drain any grease
  5. Add taco seasoning, black beans, and olives. Stir to combine and let cook for 5 minutes to warm up your beans and olives
  6. Add about a quarter cup of pork mixture to a tortilla, place strip of cream cheese and shredded cheese on top of meat
  7. Roll up and place into your baking dish
  8. Cover the rolled up tortillas with the remaining half can of enchilada sauce and sprinkle on one cup of cheese
  9. Bake in the oven 15-20 minutes
