Spice up your menu with this simple and delicious pork enchilada recipe! The secret ingredient in these - cream cheese - makes them extra tasty. Here’s what you’ll need:
- Fairland Farms ground pork - 1 pound
- Taco seasoning
- Enchilada sauce - 2 10 oz cans
- Black beans
- Black olives
- Flour tortillas - taco sized
- Shredded cheese - 2 cups
- Cream cheese - 1 pkg, cut longways into small strips
Instructions:
- Turn your oven on to 375°F
- Spray a 9x13 baking dish with non stick spray
- Pour and spread half a can of enchilada sauce into your dish
- In a skillet, cook your ground pork and drain any grease
- Add taco seasoning, black beans, and olives. Stir to combine and let cook for 5 minutes to warm up your beans and olives
- Add about a quarter cup of pork mixture to a tortilla, place strip of cream cheese and shredded cheese on top of meat
- Roll up and place into your baking dish
- Cover the rolled up tortillas with the remaining half can of enchilada sauce and sprinkle on one cup of cheese
- Bake in the oven 15-20 minutes
