Enjoy a cozy meal at home with this ham and potato soup recipe! Serves ~5 people
What you’ll need:
- 1 1/2 to 2 cups of diced ham
- 2-3 medium/large potatoes (I used russet but any kind works)
- 1 stalk of celery (about 1/2 cup)
- 32 oz chicken broth
- 5 Tbs butter
- 1/4 cup flour
- 2 cups milk
- salt & pepper (to taste)
Instructions-
- Peel and chop potatoes into 2 inch cubes
- Dice celery into small pieces
- Add ham, potatoes, and celery into your pot and pour in your chicken broth
- Cook on a low boil for ~15 minutes or until your vegetables are tender
- Add your butter to a medium sized skillet and whisk in your flour and stir until golden colored
- Slowly add in your milk and stir often for 5 minutes until thickened
- Pour mixture into your pot and stir until combined
- Add salt and pepper to taste
