Butternut Squash Pasta

The weather is cooling down and that means it's time for something warm and cozy for supper! This butternut squash checks all the cozy fall vibes boxes and is a fun one to make!
Ingredients
  • butternut squash
  • box of pasta
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1/2 cup shredded parmesan
  • salt & pepper to taste

Instructions

  1. Pre-heat oven to 350 degrees
  2. Cut skin off butternut squash and cut into 2 inch cubes
  3. Place on baking sheet and sprinkle over the chili flakes, paprika, oregano, garlic powder and pinch of salt & pepper
  4. Add olive oil and rub over squash. Roast in oven for 30 minutes. Toss half way through
  5. Bring a pot of water to a boil. Cook your pasta according to instructions. Reserve 1 cup of pasta water before draining
  6. Once squash is cooked, place in pot and add the cream and parmesan. Use an immersion blender to blend until smooth and there are no lumps. (You can also use a food processor)
  7. Add pasta water and stir to combine. If sauce is still too thick, add more pasta water or milk until you reach the right consistency. Season with salt and pepper to taste
  8. Add your cooked pasta and toss until it is coated with the sauce
  9. Top with parmesan and cracked pepper
